Cilantro is really a trifecta in one plant. Harvest it young and you get bright, citrusy leaves perfect for salsas, soups, and marinades. If you let it bolt, its small white-pink flower umbels are a favorite of beneficial insects like ladybugs, hoverflies, and parasitic wasps, all of which help keep aphids and other garden pests in check. Let it go to seed instead, and those same plants give you coriander, a warm, nutty spice essential to curries, baked goods, and spice blends. Cilantro seeds actually form in fused pairs, so before planting, roll them gently between your palms or on a hard surface to split them apart to help them germinate faster and more evenly.

How to grow it
Sow directly in the garden in early spring, 3β4 weeks before your last frost (it can also be fall-sown in October in zones 3β7). Space furrows 2β3 feet apart, cover seeds lightly, and press in to ensure good soil contact.
Cilantro germinates within 7-10 days in cool soil, so if temperatures climb, expect slower sprouting. Keep soil consistently moist while seeds are getting started, then ease off, Established plants prefer soil on the drier side.Β
Harvest leaves in cool season, seeds can be harvested summer through fall. For a steady supply of leaves all season, sow a fresh round every 3 weeks, and pick leaves before the plant flowers for the best flavor.
Left to mature, plants will flower attracting beneficial insects and set seed 40β70 days after sowing.
